Sweet Potato Au Gratin

Thinly sliced potatoes with a creamy cheesy sauce that is bubbled up and crisped- now that’s what I call a side dish! This version is made with sweet potatoes and pepper spiked cheese. The sweet, salty & spicy tastes are insanely satisfying and work well together.
2 large sweet potatoes
2 Tbsps of butter, chopped into little pieces
1 cup shredded cheddar cheese
1 cup shredded chipotle cheddar cheese (or some other peppered cheese)
1/3 cup minced shallots
Salt and pepper to taste
Slice the sweet potatoes into thin, round slices either by hand or with a mandolin.
In a round cake pan, arrange the potato slices so they cover the bottom of the pan.
Place 1/3 of the cheese, butter and shallots on top of the potatoes, then repeat the process 2 more times building in layers.
Wrap in tinfoil and cook on 425 degrees for 30 minutes, then remove foil. Cook for an additional 10 minutes, or until crisped.
