Potatoes are made for garlic and butter!

  • 2 russet potatoes
  • 3 Tbsps of butter
  • 2 Tbsps of olive oil
  • 1 Tbsp garlic powder
  • 1 tsp dry parsley
  • 1 tsp fresh lemon juice
  • 1/2 cup of panko breadcrumbs
  • 2 Tbsps freshly chopped parsley
  • 2 Tbsps of freshly grated parmesan cheese
  • 1 tsp salt
  • 1 tsp pepper

  1. Slice the potatoes vertically into 1/4inch thick slices.
  2. Place potatoes in a bowl and coat with the 1/2 salt, 1/2 pepper, spritz of lemon, dry parsley and garlic powder.
  3. Warm the butter and olive oil in a wide frying pan on medium/high heat.
  4. Place the potatoes in the pan and cook for 5 minutes per side, or until soft in the middle.
  5. Pull the potatoes from the pan and quickly add the breadcrumbs, the rest of the salt & pepper, fresh parsley, and cheese. Toast for 2 minutes.
  6. Top the potatoes with the toasted bread crumb mixture.
