  • 3 ears of corn
  • 4 serrano peppers, sliced
  • 1 shallot, diced
  • 3 Tbsps butter
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 Lb pork belly, cubed
  • 1 Tbsp olive oil
  • Cheese as a topper (optional & to taste)
  1. Warm the olive oil in the pan & toss in the pork belly, crisping each side, the total time should be about 7 minutes.
  2. Then add the butter, corn, peppers, shallot, garlic powder, salt, & pepper
  3. Cook for another 5-7 minutes, continuing to brown the veggies & pork belly. Stir often.
  4. Eat alone or as a side dish.
  5. Top with cheese if you like.
