Oh man remember those pre-packaged rice boxes you ate growing up? It came with the rice and a white packet full of seasoned powder. I have to admit, I loved them. Add a little butter & WOW. The problem is, 1 box is a days worth of calories!! We can do better!! This version is much more fresh and will not weigh you down.

  • 1 head of diced cauliflower
  • 3 Tbsps fresh diced chopped cilantro
  • 1/4 cup diced red onion
  • 1 diced jalapeño pepper
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp coriander
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 Tbsps of olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup vegetable oil

  1. Finely chop the cauliflower
  2. Warm oil in the pan and add onions, jalapeños, cauliflower, cumin, garlic powder, coriander, chili powder, salt and pepper.
  3. Cook down mixture on medium until soft, yet crisp (about 20 minutes) then toss in the cilantro.
  4. Top with cheese and sour cream (If you have a few calories to spare).
