Potato salad at a summer picnic… iconic. In my case, I will avoid the bun with my burger to save room to the potato salad. What is another staple that goes with a burger? FRIES!! This recipe take these 2 favorite burger sidekicks and teams them up!

  • 5 large Idaho potatoes
  • 1/2 cup diced red onions
  • 1/2 cup diced celery
  • 2 Tbsps fresh chopped parley
  • 2 Tbsps fresh chopped oregano
  • 3/4 cup of mayonaise
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 3 Tbsps vegetable oil
  • Salt and pepper to taste

  1. Instead of cutting and boiling the potatoes, cut them into small cubes and crisp them in a hot pan with oil on medium.
  2. Keep stirring them, ensuring each side gets equal amount of cook time in the pan (10-12 minutes).
  3. Pull the potatoes from the pan and let them cool to room temperature.
  4. Mix crispy potatoes in a bowl with onions, celery, parsley, oregano, mayo, garlic powder, paprika, salt and pepper
