Crispy Rosemary & Oregano Chips

I created this version with the intent of being much more thoughtful about creating a quality chip. Trust me, opening a bag & chowing down has its appeal. But, taking the time to perfectly fry each chip makes you much more mindful about eating them.
3 large Idaho potatoes
3 Tbsps of fresh chopped oregano
1 Tbsp salt
2 Tbsps freshly grated parmesan cheese
Vegetable oil, 2 inches high in the pot.
Slice the potato into thin chips.
Place the sliced potatoes in a bowl of salted cold water for 30 minutes.
Heat oil to 365 degrees and fry the chips in small batched until they are golden.
Once fried, let them drain on a paper towels.
Dress the fried chips with salt, oregano and parmesan to taste.
