These potatoes are a HUGE hit! They are crispy, salty and flat-out delicious!

  • 2 large Idaho potatoes
  • 2 tsps salt
  • 2 tsps pepper
  • 1 tsp crushed red pepper
  • 1/4 cup olive oil
  • 1/4 cup parmesan cheese
  • 2 Tbsps sour cream
  • 1 sprinkle of cayenne pepper

  1. Peal and dice the potatoes in 1/2 in cubes.
  2. Warm the olive oil in a frying pan on medium to high heat.
  3. Mix in potatoes, salt, pepper and red pepper, stir frequently for 5 minutes.
  4. Mix in the parmesan cheese and leave for 5-6 minutes, keep checking that it is not burning.
  5. Get a plate and flip over the potatoes so the "cake" keeps it's form.
  6. Top with sour cream and cayenne.
