Crispy Potato Pancakes

These potatoes are a HUGE hit! They are crispy, salty and flat-out delicious!
2 large Idaho potatoes
2 tsps salt
2 tsps pepper
1 tsp crushed red pepper
1/4 cup olive oil
1/4 cup parmesan cheese
2 Tbsps sour cream
1 sprinkle of cayenne pepper
Peal and dice the potatoes in 1/2 in cubes.
Warm the olive oil in a frying pan on medium to high heat.
Mix in potatoes, salt, pepper and red pepper, stir frequently for 5 minutes.
Mix in the parmesan cheese and leave for 5-6 minutes, keep checking that it is not burning.
Get a plate and flip over the potatoes so the "cake" keeps it's form.
Top with sour cream and cayenne.
