There are so many creative ways to make delicious mashed potatoes. I made this version to pair with a tequila-lime chicken. So basically, it would work well with any type of Mexican type protein. Or, you could be like my son and eat a huge bowl of them on it's own

  • 4 large russet potatoes
  • ½ cup of butter
  • ¼ cup of adobo sauce (the sauce that canned chipotle peppers sit in)
  • Salt and pepper to taste

  1. Bake the potatoes in tinfoil at 425 degrees for 45-60 mins, until they are super soft (most people boil, but baking is MUCH better).
  2. Scoop out the inside of the potato and combine with butter, adobo, salt and pepper, whip until creamy.
  3. I sometimes add a little extra adobo to the top for flavor
