  • 4 sandwich rolls
  • 20oz of cooked salmon
  • 1 small, diced onion
  • 1 stalk of diced celery
  • 2 Tbsps diced, fresh parsley
  • 1 cup panko breadcrumbs
  • 1 Tbsp crushed red peppers
  • 1 tsp salt
  • 1 tsp pepper
  • 3 Tbsps butter
  • 2 eggs, whipped
  • 1/2 cup mayo
  • 2 Tbsps relish
  • 4 Tbsps shredded lettuce

  1. Toss the celery, onions, butter and a pinch of salt in a pan on medium heat for 4-5 minutes, or until the veggies are soft.
  2. Combine the cooked veggies, salmon, parsley, red peppers, salt, pepper, panko, and eggs in a bowl,
  3. forming 4 equal cakes.
  4. Warm the remaining butter in the pan and cook cakes on medium heat for 4 minutes per side.
  5. In a small bowl, combine mayo and relish.
  6. Place cooked cakes, mayo and lettuce on the roll.
