Mashed Potato Soup
Not sure what to do with those leftover mashed potatoes? Add some veggies and turn them into an insanely delicious soup! This soup is rich and full of flavor remininscient of Thangksgiving dinner!
2 cups leftover mashed potatoes
2 Tbsps butter
1 small onion
3 diced garlic cloves
1 cup chopped carrots
1 cup cooked broccoli
1 Tbsp fresh thyme
2 Tbsps fresh parsley
4 cups chicken stock
1 tsp salt
1 tsp pepper
In a pot, melt the butter then toss in the onions, carrots & garlic.
Once slightly caramelized, add the chicken stock, broccoli, thyme, parsley, salt & pepper.
Add the mashed potatoes a 1/2 cup at a time, whisking them in.
Cook down on medium heat for 20 minutes
