Collards and Sausage
I always keep these pre-made sausages on-hand for a quick and easy meal. Add some potatoes & greens- that's a delicious dinner!
1 large russet potato, cut into cubes
3 Tbsps butter
1 small, diced onion
10 collard green leaves, cut into 1in squares
1 tsp salt
1 tsp pepper
4 bacon strips, diced
3 gloves of diced garlic
4 precooked dinner sausages
1/2 cup water
Warm the butter in the pan and toss in the onions and potatoes, keep stirring the potatoes until cooked and crisp, add salt and pepper.
In another pan, crisp the diced bacon, then add the garlic and the greens. Add salt and pepper.
Simply warm the sausages.
Layer the dish with the potatoes, sausage then the bacon greens.
