Looking for a creative way to dress up good old fashion chicken and potatoes? This is the perfect dish for a weeknight dinner or a nice dinner party.

  • 2 whole Idaho potatoes
  • 5 Tbsps butter
  • 2 tsps salt
  • 2 tsps pepper
  • 1 tsp crushed red pepper
  • 1 diced fresh red pepper
  • 1 small, diced white onion
  • 2 cups of mozzarella cheese
  • 2 large chicken breasts

  1. Peel and slice the potatoes into 1/6th inch think slices, per large potato about 10-12
  2. Warm the pan to medium/high heat.
  3. Melt 2 Tbsps of butter in the pan, then drop in the potatoes. Cook 4 minutes per side or until browned.
  4. Once crisped, pull from pan and sprinkle with salt, pepper and red hot peppers.
  5. Sprinkle cheese over potato slices and put in the oven on broil for 4-ish minutes.
  6. Slice the chicken into 1/4in slices.
  7. In another pan, melt 2 Tbsps butter and drop in the slices on chicken, cook 3 minutes per side
  8. Pull chicken from the pan, toss in the red pepper and onions, cook down for 10 minutes on medium heat.
  9. To plate, place a slice of potato then a piece of chicken repeat 3-4 times depending on the serving size.
