Chicken Meatballs with Creamed Corn Sauce.

  • 1 Lb of ground chicken
  • 1/4 cup panko breadcrumbs
  • 2 Tbsps salt
  • 2 Tbsps pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 Tbsps freshly diced parsley
  • 3 egg yolks
  • 4 ears of corn with the kernels removed
  • 2 cups of chicken stock
  • 1 cup of heavy cream
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 Tbsps olive oil

  1. In a bowl combine the chicken, 1 Tbsp salt, 1 Tbsp pepper, garlic powder, onion powder, egg yolks, panko & fresh parsley. Then roll into 2 inch balls.
  2. Warm the oven to 400 degrees.
  3. In a pan, warm the olive oil then brown each side of the meatball. This will take about 1 minute per side.
  4. Place the balls in an oven safe dish and pop into the oven for 10-12 minutes, or until center reaches 165 degrees.
  5. In the pan, leave the scrapings of the chicken, adding the chicken stock and deglaze on high temperature.
  6. Once reduced a bit, add the remaining salt, pepper, corn, cayenne & paprika.
  7. Cook down until it is a heavy, soup-like consistency.
  8. Service corn mixture in a bowl, topped with the chicken balls.
