Really anything including toast and eggs, I am IN! What is more nostalgic than a simple weekend breakfast?

I love to find fun flavor combinations. Serrano peppers are super easy to grow in a pot outside. With that, I always have a nice supply of them. I pair them with some peppered salami and forget it….killer egg toast.

Ingredients

  • 2 slices of whole grain bread
  • 1-2 serrano peppers
  • 2 pieces of julienned salami
  • 2 eggs
  • 4 Tbsp butter
  • Add salt and pepper to taste.

  1. Warm the pan, drop in 1 Tbsp of butter, once melted drop in the whole serranos and julienned salami.
  2. Once crisped, pull the serranos and salami from the pan and drop in the eggs.
  3. Toss in another Tbsp of butter into the pan while continually pouring melted butter over the egg yolks to help them cook. This should only take 2-3 mins.
  4. Toast the bread and butter with a Tbsp of butter on each slice.
  5. Top the butter toast with the eggs, the salami and the diced up cooked serrano.
