Ingredients

  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper
  • 2 Tbsps olive oil
  • 3 Tbsps butter
  • 1 large russet potatoes cubed (skin-on)
  • 1/2 small onion, diced
  • 1 Tbsp fresh chopped parley
  • 1/2 cup cubed pork belly

  1. Warm half the olive oil in a pan, then add in the potatoes & pork belly. Cook for 5 minutes, stirring often.
  2. To the potatoes, add the onions, 2 Tbsps of butter, salt, & pepper. Cook for another 4-5 minutes.
  3. Top with fresh parsley & cook for 30 more seconds.
  4. In another pan, add 1 Tbsp of olive oil. Once warmed, crack the egg.
  5. After 30 seconds, drop in the remaining butter, allowing it to bubble up over the egg white. Cook for 3-4 more minutes.
  6. Serve the egg over the hash
