Perfect Parfait Pancakes
The age old debate.. do I have the healthy yogurt, or the carb filled pancakes for breakfast? Sometimes you just need both.
This pancake is sweet and completely satisfying! You might want to go with a salad for lunch.
Complete pancake mix for 4 larger pancakes (you can make more or less depending on how many you serve)
1/2 cup shredded coconut
1 container of strawberry (or whatever is your preference) yogurt
1/2 cup whipped cream
2 Tbsp butter
2 Tbsp chocolate chips
Mix the pancake mix according to the instructions. Next, add half of the shredded coconut.
Warm the pan, while adding butter. Pour in the pancake mix, cook until golden brown and fluffy.
In a bowl, mix the yogurt and whipped cream.
Top each pancake with yogurt mix, chocolate chips, and sprinkle on the remaining shredded coconut.
