  • 2 fresh eggs
  • 2 oz sharp cheddar cheese
  • 1 Tbsp harissa
  • 3 Tbsps of cream
  • 1 medium potato
  • 2 Tbsps butter
  • Salt and pepper to taste

  1. Cut the potato verically into fries.
  2. Saute potatoes in a saucepan with butter on medium for 5 minutes a side or until cooked through.
  3. Whip eggs, cheese, harissa & cream in a bowl until fully combined.
  4. Dump the egg mixture in a warm saucepan on medium, continuously stir until the eggs have a porage-like consistency (trust me).
  5. Salt/pepper the eggs and fries.
  6. Dunk the fries in the eggs and enjoy.
