  • 1/4 lb pork belly cubed into 1/2in cubes
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 cup of your favorite hot sauce
  • 1 cup shredded cheddar cheese
  • 4 large flour tortilla
  • 4 vegetable oil

  1. In a castiron skillet warm 1 Tbsp of oil then toss in the pork belly
  2. Crisp the pork belly on all sides about 7-8 mins, pull out then set aside
  3. In a bowl combine the hot sauce and spices, set aside
  4. Take the tortillas and turn them into square inch cracker shapes
  5. Put the remaining oil in a pan once
  6. Brown both sides of the cut up tortilla, it should take no more than 30 seconds a side (watch closely)
  7. Top the tortilla pieces and pork belly with the sauce
  8. Place the pork belly on the tortilla and the cheese on the pork belly
